Hazelnut Pesto


  1. 1/2 cup of Cooks&Co 100% Pure Rapeseed Oil
  2. 1/4 cup of Cooks&Co Hazelnut Oil
  3. 1 cup of Skinned lightly toasted hazelnuts
  4. 2 cups of Flat-leafed parsley
  5. 2 cloves of Garlic
  6. Ground black pepper
  7. Salt to taste

Preparation time: 10 mins
Serves: 4

Preparation Method

Blend all the ingredients in a food processor. This hazelnut pesto is perfect drizzled over fresh pasta with a sprinkling of a hard flavoursome cheese such as Manchego, Parmesan or Pecorino.

It's also delicious drizzled over roasted Mediterranean vegetables, stirred into potato mash or spread over a roasted fish fillet or pork chop for extra flavour.
