Ingredients
- 3 Cooks&Co Green Frenk Chillies (2 for Garnish and 1 for the Mayo)
- 3 tbsp Mayonnaise
- 120g Mushrooms
- 2 cloves of Garlic
- 1 Red Pepper
- 1 Small Red Onion
- 6 Small Wraps
- 1 tsp Smoked Paprika
- 1 Large Lime
- Garnish with fresh coriander & toasted seeds.
Preparation Method
- 1. Prep the veg by thinly slicing the peppers and onions and roughly chopping the mushrooms.
- 2. Add the veg to a frying pan with a generous drizzle of olive oil and fry for around 4-5 minutes on a high heat.
- 3. Thinly slice/mince the garlic then add to the pan with the mushrooms and fry for a further 1 minutes before adding to smoke paprika.
- 4. Reduce to a low heat and leave whilst preparing the tortillas.
- 5. Place a shallow pan on a high heat then add the tortilla and taost for around 1 minute, then shape into a taco whilst still hot and set aside, repeat until all 6 are created.
- 6. Create the mayo by simply mixing the 1/2 squeezed lime juice, 1 finely chopped Green Frenk Chilli and the mayo together.
- 7. Stuff the tacos with the veg mix then garnish with a generous spoon full of the chilli mayo along with 2 finely sliced Green Frenk Chillies, coriander and toasted seeds.
