Black Eyed Bean Curry - Recipe

Black Eyed Bean Curry


 2x 400g Cooks&Co Black Eyed Beans, Drained

1 Onion, Finely Diced

1 Tbsp Oil

3 Garlic Cloves, Crushed

2 Tbsp Tomato Puree

1 Tsp Ground Cumin

1 Tsp Ground Coriander

1/2 Tsp Ground Turmeric 

3 Tsp Brown Sugar

1/2 Lemon, Juice

1/2 Tsp Chilli Powder

Bunch Coriander, Roughly Chopped

Preparation Time: 10 mins

Cooking Time:  25 minutes

Serves: 4

Black Eyed Bean Curry

Preparation Method

1. Heat the oil in a large pan and fry the onion until soft. Add the garlic and fry for a further minute.

2. Add the tomato puree, ground cumin and ground corianer to the pan and cook for a futher mintue.

3. Add the beans to the pan along with the turmeric, brown sugar, lemon juice, chilli powder and a splash of water.

4. Allow the curry to simmer for about 15-20 minutes, or until the sauce has thickened.

5. Season to taste.

6. Top with coriander then serve with some rice or with Naan bread.
