Chickpea Truffles - Recipe

Chickpea  Truffles


1/2 can of Cooks&Co Chickpeas, drained

100g Nut Butter (either Peanut or Almond)

1 Tbsp Maple Syrup

50g Dark Chocolate Chips

20g Coconut Flour

20g Cocoa Powder

100g Dark Chocolate

2 Tsp Cooks&Co Coconut Oil

Toppings of your choice (Sprinkles, Sea Salt, Nuts etc)




Preparation Time: 15 mins

Cooking Time: 20 mins (chilling)
Serves:  Makes approx. 12 Truffles

Chickpea  Truffles

Preparation Method

1. Pulse the chickpeas, nut butter and maple syrup until a smooth paste then add the cocoa powder and coconut flour and pulse into a dough like consistency

2. Stir through the chocolate chips

3. Line a baking tray with parchment paper and roll the dough into truffle sized balls, place evenly on the tray

4. Pop in the fridge for 20 minutes

5. Meanwhile, melt the dark chocolate slowly in the microwave with the coconut oil

6. Dip each truffle into the melted chocolate and place back on the tray

7. Sprinkle with a topping of your choice and place in the fridge for at least an hour
