Roasted Red Pepper Hummus


1/2 Jar of Cooks&Co Roasted Red Peppers

1 Large Garlic Clove

1 Can of Cooks&Co Chickpeas or Butter Beans

1/2 cup of Cashews

2 Tbsp Olive Oil

Juice from 1/2 a lemon

Pinch of Salt and Pepper (To Taste)

Pinch of Chilli Flakes (If desired)

Pinch Smoked Paprika

Tsp light Tahini

Preparation Time: 10 mins
Serves: 2

Roasted Red Pepper Hummus

Preparation Method

1. In the bowl of a food processor, combine the Cooks&Co Roasted RedPeppers, Artichokes, Coriander, Parmesan cheese, Olive oil, Capers, Garlic and lemon

2. Pulse until finely chopped and the mixture is blended.

3. Transfer to a serving bowl and season to taste with salt and pepper.

4. Cover and refrigerate for at least two hours before serving to blend the flavours
