Roasted Red Pepper Rigatoni Pasta - Recipe

2/3 Cooks&Co Roasted Red Peppers

1/4 cup of Almond Milk

1/4 cup Almond Butter

2 tbsp Tomato Paste

1/2 tsp Garlic Salt

1 tsp Nutritional Yeast

50g Rigatoni Pasta (Uncooked)

Handful of Coriander

30g Pumpkin Seeds

20g Mixed Chopped Nuts

Preparation Time: 10 mins
Cooking Time: 10 - 15 minutes
Serves: 2

Preparation Method

1. Blend all ingredients  (except the pasta, coriander, nuts and seeds) in a food processor and set aside.

2. Cook the pasta according to the pack and drain once ready.

3. Add the sauce to the pasta and finish with the coriander, nuts and seeds.
