Roasted Red & Yellow Pepper Fritatta - Recipe


400g of Cooks&Co Roasted Red & Yellow Peppers 
8 Eggs, slightly beaten

1 Onion, diced
3 Garlic Cloves, crushed 
2 handfuls of Rocket 
1 Mozzarella Ball, grated 
2 tbsp Green Pesto
1 tbsp Extra Virgin Olive Oil
Salt & Pepper, to season

Preparation Time: 20 mins
Cooking Time: 45 minutes

Preparation Method

1. Preheat oven to 180c and grease a 9-inch round baking dish with oil.

2. Heat the olive oil in a large frying pan over a medium-high heat.

3. Fry the onions until soft and then add the garlic and fry for another minute.

4. In a separate bowl combine eggs, red pepper, rocket, mozzarella, pesto, salt and pepper.

5. Combine the 2 mixtures then pour into the prepared baking dish.

6. Bake for 40-45 minutes or until soft.

7. Leave to cool for about 5 minutes before serving.
